How is spoilage noticed in dry yeast?
Dry yeast, by nature, keeps far longer than fresh yeast, but once opened and exposed to air it gradually absorbs moisture and clumps. If the fine granules that should flow freely instead stick together in little clusters, it has started taking on moisture.
A packet with yellowish-brown stains instead of white, or a sachet that looks swollen, may mean the packaging was damaged and the yeast has spoiled. That kind of visible sign is rare in unopened packets, so testing is the real check for dry yeast.
How do you test whether yeast has lost its power?
Even when the color and smell seem fine, the most reliable way to check yeast's strength is to test it in warm water with a pinch of sugar before using it. Mixed into warm water (around 37°C/98°F) with sugar and left for 10 minutes, active yeast should build up a foamy head.
If no clear layer of foam forms in that time, the yeast has lost its power and won't raise dough even if you add it. A faint bit of bubbling isn't enough — the foaming should be visible and substantial.

How can you tell dough made with dead yeast?
Dough made with dead yeast won't gain volume in the expected time even left at room temperature; the overall size stays nearly the same even if a few small bubbles form on the surface. Waiting longer usually doesn't change the outcome in that case.
If baked anyway, the result comes out dense, heavy and flat; in a dough meant to rise, like bread or pide, that texture is the clearest sign that yeast was the problem.
