What Does Ethylene Gas Actually Do?
Ethylene is a natural ripening signal the fruit produces in its own cells; it converts starch into sugar, softens the cell walls and intensifies aroma. Out in the open air this gas disperses quickly, so ripening crawls along slowly.
A paper bag lets the gas build up around the fruit, exposing it more intensely to its own signal. A plastic bag traps moisture instead and raises the risk of mold, which is why paper is the better choice.
Why Does Adding a Banana or Apple Help?
Bananas and apples release far more ethylene than most other fruit. Putting one next to an unripe avocado, pear or tomato raises the gas concentration inside the bag and speeds up ripening.

These need to be chosen ripe at the point of purchase; letting them sit longer afterward only hastens spoilage, it doesn't improve the flavor. The only right approach is picking a fragrant, ripe one at the store and eating it soon, before refrigerating.
Should the Bag Be Sealed or Left Loose?
The bag doesn't need to be sealed airtight; folding the top over loosely keeps the ethylene from dispersing while still letting the fruit breathe. A fully airtight bag can trap moisture and encourage mold instead.
The bag should sit at room temperature on a counter out of direct sunlight; sunlight can overheat one side of the fruit and cause it to soften unevenly.
How Do You Check Whether It's Ripe Yet?
The simplest way to check for ripeness is to open the bag once a day and give the fruit a gentle squeeze in your palm. An avocado is ripe when it yields slightly to gentle pressure, a pear when it softens near the stem.
