How Many Minutes Does a Poached Egg Take to Cook?

A poached egg reaches a runny-yolk texture in about 2.5-3 minutes in gently simmering (90-95°C) water with a splash of vinegar; for a medium yolk, that stretches to 4 minutes. At a full rolling boil, the egg white shreds and turns stringy.

Done right, the white is fully set while the yolk still jiggles slightly when touched.

Why is the water kept just below a full boil?

At a rolling boil, the strong bubbles tear the egg white apart and scatter it through the water; the ideal temperature is the 90-95°C range, where small bubbles show on the surface but there's no vigorous boiling. At that temperature the white sets around itself instead of spreading.

A teaspoon of vinegar added to the water helps the white set faster, which cuts down on shredding.

How does the yolk texture change with time?

An egg pulled at 2.5-3 minutes keeps a fully runny yolk that flows out the moment it's cut; at 4 minutes, the yolk firms up slightly around the edges while the center stays soft. Past 5 minutes, the yolk sets almost completely.

Without a sieve, cracking the egg into a bowl first and letting it sit for a few seconds lets the thin part separate on its own, with a similar effect.
