Jam is usually cooked over medium-high heat, with a clear, steady boil; stretching the simmer out on very low heat lets the fruit break down too much and leaves the jam looking cloudy. A steady, moderate boil evaporates water faster, so the set comes together sooner.
How is timing set for mixed-fruit jams?
In jams made with more than one fruit, total time is set by the juiciest fruit in the mix; faster-softening fruit, like banana, goes in during the last 5-10 minutes so it doesn't turn to mush. That order keeps every fruit at the right texture at the same time.
