How Many Grams Is a Standard Cup?

How much a cup of an ingredient weighs depends on what is in it; as a rough rule, 1 cup of water weighs about 200 grams, but flour, sugar or oil each weigh noticeably differently by cup. That means a recipe calling for one cup of something does not translate to the same weight across every ingredient.

How many grams are flour and sugar?

1 cup of sifted flour averages around 120 grams; flour packed down tightly in the cup can weigh more than that, so spooning it in lightly and levelling off the top gives a more consistent result. For granulated sugar, 1 cup comes to roughly 200 grams.

Brown sugar packs more densely than granulated, so it comes out slightly heavier in the same cup — usually by about 10-15 grams.

How does the measurement change for liquids?

For water and milk, 1 cup weighs about 200 grams, since their density is very close to that of water. Less dense liquids like olive oil weigh a little less by the same volume, typically around 180 grams.

Thicker liquids like honey or molasses work the other way around; being denser than water, 1 cup of either can weigh as much as 280-300 grams.

Why is weighing on a scale more reliable?

Since a cup's weight can shift depending on the size of the cup and how the ingredient is packed into it, using a scale gives a more reliable result for precise recipes. In recipes sensitive to chemical balance, like cakes and pastries, even a few grams can change the outcome.

Without a scale, using a standard cup and the same filling technique every time keeps recipes more consistent. Filling to the standard mark rather than right to the rim also matters.

How did the Turkish su bardağı measure become standard?

In Turkish cooking, measures like the cup, spoon and coffee cup come from a time before kitchen scales were common; a standard su bardağı is generally taken to hold about 200 millilitres. That standard is still the reference point in many Turkish recipes.

Kitchens that use differently sized cups can end up with a different measurement; that is why it helps to measure the actual volume of the cup being used once, before relying on it for future recipes.

Spoon measures work on a similar logic; 1 tablespoon of liquid comes to about 15 millilitres, while solid ingredients like flour or ground spice can weigh a little less by the same volume. A teaspoon is generally taken as 5 millilitres and is used often for small amounts like salt or baking powder.

Borrowing a recipe from another country is worth watching out for too; the “cup” measure used in American recipes is a bit larger than a Turkish su bardağı, so treating them as identical can throw the result off slightly.

Zeytinyağı için 180 gram gibi net bir karşılık vermeniz çok işime yaradı, tarifte hep tahminle ölçüyordum. Artık tartı kullanmadan da bardakla çok daha isabetli ölçüm yapabiliyorum, ölçü tablosunu yazdırıp mutfağa astım.

Kek tarifinde undan 120 gram yerine bardakla ölçüp koydum, hamur biraz daha yoğun çıktı. Bu yazıyı okuyunca kaşıkla hafifçe doldurup düzeltme tekniğini deneyeceğim, sanırım fark bundan kaynaklanıyordu.
