Turkish coffee most often fails to foam because the coffee isn't fresh and finely ground enough, or because it's overheated or stirred while brewing. Foam forms when the gas trapped in the coffee rises slowly to the surface undisturbed as it heats — the more that process is rushed, the less foam you get.
The shape of the cezve, the water temperature, and the freshness of the coffee all come together to make this natural foaming happen on its own.
Why does the foam form in the first place?
Roasted coffee beans trap a small amount of carbon dioxide gas inside; once the coffee is ground, this gas slowly starts to escape. As the water in the cezve heats up, this gas rises as bubbles, binds with the coffee's oils and fine grounds, and forms a lasting layer of foam on top.
That layer isn't just for looks — it also traps some of the coffee's aroma and carries it into the cup.
When the sugar goes in matters too; mixing it in with the water from the start tends to make the foam settle a bit more easily than an unsweetened brew, since sugar raises the surface tension of the bubbles.
Why do stale or coarsely ground coffee kill the foam?
After coffee beans are roasted, the carbon dioxide inside them gradually escapes into the air over time; that's why coffee that's sat open a long time, or gone stale, barely has any gas left to form foam. Coarsely ground coffee has less surface area, so the gas escapes more slowly and the foam stays thin.
Turkish coffee needs a very fine, powder-like grind; a grinder that isn't set fine enough is one of the main reasons foam doesn't form.
Keeping ground coffee in an open bag in the fridge doesn't help it stay fresh either; moisture and odors seep in easily, so a sealed container in a cool, dry spot works better.
How do brewing mistakes ruin the foam?
Continuing to stir the coffee, sugar and water right after putting the cezve on the heat breaks up the foam that's starting to form and lets the gas escape uncontrolled. Keeping the heat too high has the same effect, since the water boils fast and the foam either overflows before it settles or never forms at all.
Using a wide, flat-bottomed cezve also spreads the foam thin; Turkish coffee is traditionally brewed in a cezve with a narrow neck and a wider base.
Filling the cezve only about halfway rather than to the brim also helps the foam gather properly; a cezve filled to the top leaves no room for foam and the gas escapes too soon.
What helps build more foam?
Coffee should be freshly ground and powder-fine, mixed with cold water from the start; a sudden jump in heat makes the foam form unevenly. The heat should stay low, and the cezve should be left undisturbed until it starts to boil.
Skimming off some of the foam that collects on top before the coffee fully boils and dividing it between the cups means every cup ends up with an even share of foam.
