What determines fermentation speed?
The lactic acid bacteria driving fermentation are strongly affected by temperature; in a kitchen above 25°C, pickles can start souring in as little as 2-3 days, while in a cooler spot around 15-18°C that can stretch to 7-10 days. Slower fermentation generally produces a more balanced texture and flavor.
The salt concentration in the brine matters too; roughly 6-8% (about 60-80 grams of salt per liter of water) suppresses unwanted bacteria while still letting the lactic acid bacteria do their work. Less salt speeds fermentation up but also raises the risk of spoilage.
How the vegetable is cut matters as well; thin slices or small pieces let the brine reach every point faster, so they start souring sooner than vegetables left whole.
When do the first signs appear?
Within the first 1-2 days, fine bubbles appear in the brine — a sign the lactic acid bacteria have started consuming sugars and producing carbon dioxide. From around day 3, a thin whitish foam can form on the surface.
This foam is usually harmless and can be skimmed off with a spoon; leaving the jar lid slightly loose lets the building gas escape and helps prevent the jar from bursting.
How long does full ripening take?
Thin-skinned vegetables like cucumbers and peppers usually reach the desired sourness in around 2 weeks at room temperature, while thicker, fibrous vegetables like cabbage can take 3-4 weeks. Once a taste test confirms the sourness you want, moving the jar to the fridge slows fermentation down considerably.
Refrigerated pickles keep fermenting, just much more slowly, and can be kept for months this way.
Tasting the pickles at roughly the same time each day is the most practical way to catch the sourness you're after without overshooting it; it's a habit worth building, especially on your first few batches.
Telling normal foam apart from mold
A thin, white, scattered layer of foam on the surface is normal; but fuzzy, spotted, green, black or pink patches are a different matter, and the whole batch should be discarded when they appear. Skimming off a mold layer and continuing to ferment the rest isn't a safe idea, since it can lead to food poisoning.
If the brine turns cloudy and gives off a rotten, off smell, that's also a sign fermentation went wrong, and the pickles shouldn't be eaten.
Keeping the vegetables fully submerged under the brine cuts off their contact with air and sharply lowers the risk of mold forming; a small weight or a plate wedged inside the jar is a common and effective way to do that.
