At What Temperature and for How Long Should Leftovers Be Reheated?

For leftovers to be safe to eat, their internal temperature needs to reach at least 74°C and hold there for at least 15 seconds; that threshold neutralises the bacteria that can grow during storage. Food that is only warmed through to "lukewarm" without hitting that mark carries a food-poisoning risk.

Whatever method is used to reheat — stovetop, oven or microwave — what actually matters is not the time but the internal temperature reached; a dish can look hot on the outside while its centre is still cold. Minute-based timings are therefore only a starting point; the real measure is always whether the heat has reached the thickest part of the dish.

How do you reheat food on the stovetop?

Liquid-heavy dishes like soup, sauce or stew are reheated over medium heat, stirred occasionally, until they reach a boil in about 5-8 minutes; reaching a boil is the simplest sign that the safe internal threshold has been passed. Thicker dishes, like a chickpea stew or a dish with ground meat and vegetables, need more frequent stirring to avoid sticking, with a splash of water added if needed. If only the edges are bubbling while the centre stays lukewarm, the heat has not spread through evenly yet.

How long does oven reheating take?

Oven reheating is a good way to keep the texture of casseroles and baked dishes intact: the dish is covered with foil and heated in an oven set to 180°C for 20-25 minutes. Removing the foil for the last 5 minutes lets the top brown lightly without drying out.

How do you get even heating in the microwave?

Because a microwave heats food from the outside in, a cold spot in the middle of the plate is a common problem. Stopping and stirring the food every 2-3 minutes, or rotating the plate, largely fixes this. Poking a small hole in the centre of a thick portion with a fork also helps heat reach the middle more easily.

Covering the dish with a damp paper towel or a microwave-safe lid keeps surface moisture in, stops the food from drying out, and helps the heat spread more evenly.

How many times can a dish safely be reheated?

Every heating-and-cooling cycle a dish goes through gives any surviving bacteria a fresh chance to multiply, which is why a dish should ideally be reheated only once, warming just what will be eaten rather than the whole batch. Portioning out single servings from the storage container, instead of reheating and cooling one large dish repeatedly, cuts this risk considerably.

Why do rice and chicken need extra care when reheated?

Cooked rice left at room temperature can harbour spores of a bacterium called Bacillus cereus that reheating does not fully neutralise, which is why rice should be cooled and refrigerated within 1-2 hours of cooking and reheated only once. For dense meat dishes like chicken, checking that the internal temperature has reached 74°C with a kitchen thermometer inserted into the thickest part is far more reliable than judging by eye.

A chicken breast stored as one thick piece takes longer for heat to reach the centre than a thinly sliced one, so slicing it before reheating is worth doing. The same logic applies to the middle of a thick meatball or a dish with ground meat and vegetables.
