The classic pairing for zeytinyağlı yaprak sarma, olive oil stuffed vine leaves, is plain yoghurt, a lemon wedge, and a glass of ayran. The balance of rice, onion and spice inside the leaves comes through more clearly alongside yoghurt's tang, which is why the two are served together almost without exception.

Zeytinyağlı sarma is usually served as part of a meze plate, alongside other olive-oil dishes like barbunya pilaki or artichoke, building a varied starter spread. This combination is especially favoured for a light dinner in the summer months.

What drink pairs well with it?

Rakı is the traditional pairing for zeytinyağlı sarma; its aniseed flavour has long been served alongside olive-oil meze. On an alcohol-free table, cold ayran or sparkling water can be served instead.

Why is it served at room temperature?

Is there a difference between homemade and store-bought sarma?

Homemade zeytinyağlı sarma is usually made with more olive oil, and the rice ratio inside can be adjusted to taste; store-bought versions follow a standard ratio and typically use less olive oil. That difference shows clearly in both flavour and texture.

When buying ready-made sarma, checking the ingredients list on the packaging is worth doing to see the olive oil ratio and whether additives are used; some products replace olive oil with a cheaper vegetable oil.

How many portions should you plan per person?

At a meze table, 4-6 pieces of sarma per person is usually enough; if sarma is served as the main dish, that can rise to 8-10 pieces. When working out portions, it also helps to consider how many other meze are on the table.

At a large gathering, serving sarma on one big tray makes serving easier and lets guests take a portion that suits their own appetite and cuts down on waste left sitting on the plate afterward; leftover sarma is just as enjoyable eaten cold the next day.
