For Abdigör köfte, the meat is pounded with a mallet rather than ground, until it becomes a dough-like paste. The goal is not to thin the meat but to loosen its fibers and bind the proteins, so the meatballs hold together without bread, bulgur, or egg.

Trim the meat

Trim the sinew, membranes, and visible fat from the lamb shoulder; sinew will not break down when pounded and will remain stringy in the meatballs. Cut the trimmed meat into 2-centimeter cubes and chill in the freezer for 20 minutes.

Pound the meat

25 min

Begin pounding the chilled meat on a sturdy board with a wooden mallet. Occasionally gather and fold it with a spatula, then continue pounding. After 20 minutes, the meat will lose its grainy appearance and become a sticky, gray-pink paste that lifts off the board in one piece. Add the salt and black pepper during the last 5 minutes.

Shape the meatballs

Wet your hands with cold water, take walnut-sized portions of the meat mixture, and roll them firmly between your palms. The surface should be smooth; any cracks may split open in the water.

Simmer the meatballs

20 min

Keep the stock just below a boil, with only a slight ripple on the surface. Add the meatballs in batches; a rolling boil can break them apart. Once they rise to the surface, cook them for another 12 minutes. When cut in half, the center should have no pink color.

Pour the hot butter over it

Melt the butter and stir in the Turkish red pepper flakes for 10 seconds. Drizzle over the meatballs and serve with a little of the cooking stock.

Reminder

Before pounding the meat, chill it in the freezer for 20 minutes and keep the pounding board cold. Warm meat releases its fat and falls apart instead of forming a paste. Eti dövmek gerçekten uzun sürüyor, makineden geçirenler aynı dokuyu alamıyor. Kızgın yağı dökerken pul biberi ocağı kapattıktan sonra attım, kaynar yağda biber kararıp acılaşıyor.
