Cucumber, carrot, and onion are cut into thin strips, briefly cooked in a pressure cooker until slightly tender, then tossed with a vinegar and mustard seed mixture. Boiling instead of frying in oil makes this a heart-friendly appetizer for a crowd.

Prepare the Vegetables

Cut the cucumber, carrot, and onion into thin strips.

Cook in the Pressure Cooker

Add the chopped vegetables and a little water to the pressure cooker. Close the lid, turn off the heat as soon as it whistles, let the vegetables steam for 2 minutes, then drain.

Toss with the Dressing

10 min

Mix the vinegar, mustard seeds, granulated sugar, and salt, then toss with the drained vegetables.

Serve with Peanuts

Sprinkle the roasted peanuts on top and serve, or transfer the mixture to a jar.

Reminder

Do not overcook the vegetables in the pressure cooker; the goal is to keep them slightly crisp, not to make them soft. Allergen: contains tree nuts / peanuts.
