A familiar dish on Saudi Arabian tables, this stew is made by pressure-cooking red lentils with onion and garlic sautéed with cumin and Turkish red pepper flakes, then serving it with lemon. It is a spicy, heart-friendly main course.

How to make it?

Sauté the onion and garlic

Sauté the onion in olive oil until lightly golden. Add the garlic and cook for another minute.

Add the tomato paste and spices

Add the tomato paste, cumin and Turkish red pepper flakes and cook until fragrant.

Cook the lentils

Add the red lentils, salt and water and close the pressure cooker lid. Once it comes to a boil, cook over low heat for 15 minutes.

Adjust the consistency and serve

Once the pressure has released, open the lid. Blend until smooth if you like. Serve hot with a squeeze of lemon.

Reminder

Cook the tomato paste thoroughly before adding the lentils, or the stew will taste raw. Wait for the pressure to release naturally before opening the lid so the lentils cook without falling apart.

Düdüklü tencerede mercimekleri kapak kapandıktan sonra 12 dakika pişirdim, kimyonun kokusu mutfağa hemen yayıldı. Sarımsağı biraz fazla kullandım ama limonla dengeledim, ailece beğendik ve ertesi gün soğuk kalanını bile bitirdik.
