Waakye is a Ghanaian street-food breakfast, colored not with dye or spices but with dried sorghum leaves. The leaves simmer with the black-eyed peas, tinting the water reddish brown, and are then removed. The rice cooks in that colored water, so the color runs through each grain instead of staying on the surface.

How to make it?

Boil the black-eyed peas with the leaves

Drain the soaking water. Bring the black-eyed peas to a boil with 1,500 ml fresh water and the sorghum leaves. Skim off any foam and cook for 40 minutes, until the water turns reddish brown and a pea can be crushed between your fingers.

Remove the Leaves

Use tongs to remove the leaves one at a time and discard them. Check the water level: 800 ml should remain for cooking the rice. If there is less, add hot water.

Add the Rice

Add the rinsed rice and salt and bring to a boil. Reduce the heat to its lowest setting, cover, and cook without stirring for 20 minutes. When you lift the lid, the water should be fully absorbed and small holes should have formed on the surface.

Let It Rest

Let the rice rest, covered, for 10 minutes. Fluff from the bottom with a fork before serving.

Reminder

Soak the black-eyed peas in cold water for 6–8 hours, then discard the soaking water. Be sure to remove the sorghum leaves before adding the rice; any leaves left in the pot will give it a slightly bitter taste.
