In Aegean villages, pickles left at the bottom of the crock are not thrown away, even when they have grown too sour. They are squeezed dry, sautéed in olive oil, and turned into a warm dish. The heat softens some of the acidity, while onion and a pinch of sugar round out the rest. Serve with warm bread and ayran.

Drain and chop the pickles

Place the pickles in a colander and rinse once under cold running water. Coarsely chop the cabbage on a cutting board and slice the cucumbers into rounds. Squeeze them handful by handful; if you do not press out the liquid until no drops fall, they will boil in the pan instead of browning.

Sauté the onion

Heat the olive oil in a wide skillet. Add the onion, sliced into thin half-moons, and sauté over medium heat until the edges are lightly browned.

Sauté the pickles

Add the squeezed pickles to the skillet and sauté, stirring occasionally. They are ready when their color turns dull, the edges are lightly browned, and no liquid remains in the pan. Do not cover the pan; steam will make the pickles watery again.

Season and balance

Sprinkle in the red pepper flakes and sugar, and cook for 1 minute more. The sugar rounds out the acidity rather than removing it; taste and add another pinch if needed.

Reminder

Do not add salt—the pickles are already salty. If yours are very salty, chop them, soak them in cold water for 10 minutes, then squeeze them dry; otherwise the dish may be too salty to eat.
