Make the chimichurri

Inspired by Argentina’s asado tradition, these bites are made by marinating cubes of beef striploin in a chimichurri sauce with parsley, garlic and Turkish red pepper flakes, then quickly cooking them in an air fryer. Bread-free and low in carbohydrates, they also suit a packed lunch.
Mix the parsley, garlic, olive oil, vinegar and Turkish red pepper flakes in a bowl, then sprinkle in the thyme to make the chimichurri.
Season the beef cubes with salt and black pepper and toss with half the chimichurri. Refrigerate for 20 minutes.
If you do not have an air fryer, you can get a similar result on a wire rack in an oven preheated to 200°C / 390°F. Arrange the cubes in a single layer in the air-fryer basket and cook at 200°C / 390°F for 9 minutes, turning once halfway through.
Remove the beef from the air fryer and leave to rest for 2 minutes. Drizzle with the remaining chimichurri and serve.
Bring the beef cubes to room temperature just before marinating; cold meat will not cook evenly in the air fryer. Arrange in a single layer in the basket. Stacking them will make them steam rather than brown.
