Stuffed vegetables and leaf rolls
This Turkish stuffed-pepper dish is made by filling long green peppers with a ground beef and rice mixture and cooking them in an air fryer much faster than in a traditional pot. Their thin skins soften faster than bell peppers and let the filling’s flavor come through.
Thoroughly mix the ground beef with the rice, onion, tomato, tomato paste, parsley, mint, olive oil, salt, and black pepper.
Fill the hollowed long green peppers with the mixture, leaving a finger’s width of space at the top.
Arrange the stuffed peppers in the air fryer basket and cook at 180°C / 355°F for 15 minutes. If you do not have an air fryer, you can bake them for the same amount of time in an oven preheated to 180°C / 355°F.
Long green peppers have thinner skins than bell peppers; do not press the filling in too firmly, or they may tear easily in the air fryer.
