A Buenos Aires bakery classic, vigilantes are made by sandwiching dulce de leche between two whole-wheat cookies and coating the edges with coconut. This version cooks the cookies in an air fryer instead of an oven.

Wrap the dough and refrigerate for 10 minutes.
If you do not have an air fryer, bake them in an oven preheated to 150°C / 300°F for the same amount of time. Shape the dough into small rounds and flatten slightly. Arrange them in batches in the air fryer basket and cook at 150°C / 300°F for 10 minutes, until the edges are lightly golden.
Once cool, pair the cookies and sandwich them with dulce de leche. Roll the edges in shredded coconut.
Let the cookies cool completely after air-frying before filling them. Warm cookies can melt the dulce de leche and cause it to run. Allergens: Contains wheat (gluten), dairy, and eggs.
