A celebratory rice dish from Alexandria, roz mo'ammar is made by partially cooking rice in a pressure cooker, combining it with creamy milk, and baking it until a golden crust forms. Garnish with crushed pistachios and serve hot.

Step by Step

How to make it?

1

Partially Cook the Rice in a Pressure Cooker

8 min

Rinse the rice and transfer it to the pressure cooker. Add the chicken broth and salt, close the lid, and cook for 8 minutes from the first whistle. Let the pressure release naturally before opening.

2

Prepare the Creamy Milk

5 min

Combine the milk, cream, and butter in a saucepan and heat without bringing it to a boil.

3

Transfer to a Baking Dish

5 min

Spread the partially cooked rice in an oven-safe dish and pour the creamy milk mixture over it.

4

Bake

90 min

Bake in an oven preheated to 200°C / 390°F for 90 minutes, until a golden crust forms on top.

5

Let Stand

10 min

Let the rice stand for 10 minutes after removing it from the oven.

6

Serve

2 min

Sprinkle the rested rice with crushed pistachios and serve.

Reminder

Heat the creamy milk mixture without boiling it; if it boils, it may curdle and become grainy. Allergen: Contains milk and dairy products and tree nuts (pistachios).
