Aligot is mashed potatoes from the Aveyron mountains, beaten with fresh cheese until they can stretch several meters without breaking when lifted with a spoon. The stretch comes not from stringy cheese alone, but from working the mash vigorously by hand until the cheese proteins form strands. That is why aligot is made with a wooden spoon, standing at the stove, and eaten as soon as it is ready.

How to make it?

Boil the potatoes with the skins on

Rinse the potatoes and place them unpeeled in cold water. Once the water boils, reduce the heat and cook. They are ready when a skewer inserted into the largest potato meets no resistance. Leaving the skins on prevents the potatoes from absorbing cooking water; waterlogged potatoes will make the aligot runny.

Prepare the cheese

Take the cheese out of the refrigerator and let it come to room temperature. Grate it through the finest holes or slice it paper-thin. Large pieces will clump in the mash instead of melting. Crush the garlic.

Mash while hot

Drain the potatoes and, once they are cool enough to handle, slip off the skins. Pass them through a potato ricer or the finest holes of a grater directly into the pot. Do not use a food processor: it breaks down the starch and turns the mash into a sticky paste.

Add the butter and cream

Heat the cream, butter, and crushed garlic in a small saucepan; do not let the mixture boil. Gradually stir the hot mixture into the potatoes with a wooden spoon, then add the salt and black pepper. The mash should be smooth and glossy; it will not stretch yet.

Add the cheese and beat vigorously

Set the pot over the lowest heat and add the cheese in three or four batches, stirring forcefully with a wooden spoon in a figure-eight motion after each addition. For the first few minutes, the mixture will break into strings; after 10 minutes, it will form one mass that stretches from the spoon without breaking. Keep going until the mash stretches, even if your arm gets tired, then serve immediately. It will firm up and stop stretching if left to stand.

Reminder

Bring the cheese to room temperature and grate it finely before adding it to the potatoes. Cold cheese straight from the refrigerator can cool the mash and clump instead of melting.

Dövercesine çalışma kısmı kolu yoruyor, on dakikadan önce o uzama gelmiyor. Ateşi en kısıkta tutmak gerekiyor, yüksek ateşte peynir yağını bırakıp püreden ayrıldı.

Patatesi kabuklu haşlamak su almasını önlüyor. Soyup haşlayınca püre sulu kaldı ve peynir hiç uzamadı. Peyniri ince ince dilimleyip hazırladım, iri parça koyunca püre soğuyor ve peynir erimeden lifleniyor.

Robot nişastayı parçalıyor ve püre yapışkanlaşıyor. Patates presi ya da elek kullanın, aligotta bu fark çok belli oluyor.

Tome peyniri bulamadım, taze kaşarla denedim. Uzadı ama tadı daha tuzlu oldu.
