These cocoa mini cakes are made with almond flour and powdered sweetener for a keto-friendly treat without conventional flour or sugar. Their small size makes them easy to pack individually in a lunchbox.

How to make it?

Make the batter

Beat the eggs with the powdered sweetener until foamy. Add the melted butter and mix.

Add the dry ingredients

Sift the almond flour, cocoa, baking powder and salt into the mixture. Stir until you have a smooth batter.

Fill the molds

Fill the small silicone molds two-thirds full with the batter.

Bake

12 min

Bake in an oven preheated to 180°C / 355°F for 12 minutes, or until a toothpick inserted in the center comes out clean.

Cool

5 min

Leave the cakes to cool for 5 minutes before removing them from the molds.

Reminder

Do not fill the molds more than two-thirds full, as the batter may overflow while baking. If the toothpick comes out with wet batter, bake for 2 more minutes. Allergen: contains tree nuts (almonds), eggs and milk.

Toz tatlandırıcı bulamadığım için yerine eritilmiş bitter çikolata kullandım, kekler daha nemli çıktı ama artık tam ketojenik sayılmazlar. Yine de aile içinde çok beğenildi, kakao miktarını biraz azaltmam gerekti.
