Tarte flambée, a thin flatbread from France’s Alsace region, is made with paper-thin yeast dough topped with crème fraîche, caramelized onions, and beef pastirma (Turkish cured beef). Baked briefly at high heat, it develops crisp edges.
Dissolve the fresh yeast in the lukewarm water, then knead it with the flour, olive oil, and salt to make a soft dough.
Cover the dough with plastic wrap and let it rise at room temperature for 75 minutes, until doubled in size.
Sauté the sliced onion over low heat for about 20 minutes, until caramelized.
Roll the dough paper-thin and place it on a baking sheet. Spread the crème fraîche over it, then sprinkle on the caramelized onions, beef pastirma, and nutmeg.
Bake in an oven preheated to 250°C / 480°F for 10 minutes, until the edges are crisp, then slice and serve.
