Festival is a classic Jamaican street snack made from a lightly sweet dough of cornmeal and flour, shaped into cylinders, and fried in hot oil. This version is designed to use up extra portions fried on purpose along with leftover hot sauce. Drizzled over the fried festival bread, the hot sauce creates a sharp contrast with the sweet dough.

Step by Step

How to make it?

1

Knead the Dough

10 min

Mix the flour, corn flour, granulated sugar, baking powder, and salt. Gradually add the warm water and mix into a soft dough. Cover and let it rest for 10 minutes.

2

Shape the Dough

10 min

Divide the dough into equal portions and roll each one between your palms into a thin cylinder.

3

Fry the Rolls

10 min

Heat the cooking oil and fry the cylinders for 10 minutes, until golden brown all over.

4

Serve with Hot Sauce

3 min

Drain the fried festival bread on paper towels, drizzle with the leftover hot sauce, and serve hot.

Reminder

Do not roll the cylinders too thin; thin dough can harden quickly in hot oil and remain undercooked inside. Allergen: wheat (gluten).
