A hearty everyday Indian dish of hard-boiled eggs simmered in a rich onion, tomato, and spice sauce. Fragrant with ginger, cumin, and garam masala, it is served with rice or bread.
Rub the hard-boiled eggs with a pinch of turmeric and salt. Fry them in a little oil, turning until lightly browned all over, then set aside.
Cook the onion in the remaining oil until golden. Add the garlic and ginger and cook for 1 more minute. Stir in the cumin, turmeric, garam masala, and crushed red pepper flakes.
Add the tomato puree and cook over low heat until the oil separates. Slowly stir in the yogurt and cook for a few more minutes.
Add the fried eggs to the sauce with a little water. Simmer over low heat for 5 to 6 minutes, then serve with hot rice or bread.
Peel the hard-boiled eggs and prick them lightly with a fork before adding them to the sauce. This lets some sauce seep into the eggs for more flavor. Contains eggs.
