A staple tapa in bars in Córdoba and Granada: paper-thin eggplant slices are soaked in milk, fried until crisp, and drizzled while hot with dark sugarcane molasses. Each bite is both salty and sweet. Soaking the eggplant in milk removes bitterness and leaves the surface damp enough for the flour to stick; if you skip this step, the coating will not adhere and the slices will absorb oil.

How to make it?

Slice the eggplant thinly

Wash the eggplants and slice them lengthwise or crosswise into 4 mm rounds. Use a mandoline if you have one; if cutting by hand, keep the slices an even thickness. Thick slices may burn on the outside before the inside cooks. Place the slices in a wide container, pour the milk and salt over them, and weigh them down with a plate so they are fully submerged.

Drain and pat dry

Transfer the slices to a colander and let them drain for 5 minutes. Place them between paper towels and press gently to remove excess milk. The surface should remain damp but not dripping; wet slices will form clumps of batter instead of a light coating, while dry slices will not hold the flour.

Mix the flours

Combine the wheat flour and chickpea flour on a large plate. Chickpea flour gives the coating a golden color and keeps it crisp even after it cools; it is commonly used for fried foods in Andalusia.

Dredge in the flour mixture

Coat the slices one at a time in the flour mixture, covering both sides, then shake off the excess. A thick flour coating will fall off in the oil and burn at the bottom of the pot. Arrange the coated slices in a single layer; do not stack them.

Fry in oil at 180°C / 355°F

Heat the oil to 180°C / 355°F; a pinch of flour should sizzle immediately but not violently when dropped in. Fry four or five slices at a time for 1.5–2 minutes per side, until golden and crisp. Transfer them to a wire rack; piled on paper towels, they will soften in their own steam.

Finish with grape molasses while hot

Arrange the slices on a plate while hot and drizzle the molasses over them in a thin stream. Do not pool it on the plate; the liquid underneath will soften the crisp eggplant. Sprinkle with fresh thyme and a pinch of coarse sea salt, then serve immediately.

Reminder

Soak the eggplant slices in milk for at least 30 minutes, preferably 1 hour, then drain them well. If you dredge them in flour before draining, the coating will clump and fall off during frying.
