Simmer dried apricots with a cinnamon stick, cloves and lemon zest in a pressure cooker to make this compote. No sweetener is added, so it relies on the apricots’ natural sweetness. Prepare the apricots

Rinse the dried apricots in cold water.

Add them to the pressure cooker

Put the apricots, water, cinnamon stick, cloves and lemon zest in the pressure cooker, then close the lid.

Cook

Bring the cooker to pressure over high heat. Once it whistles, reduce the heat to low and cook for 15 minutes. Remove it from the heat and wait for the pressure to release naturally.

Cool and serve

Open the lid, remove the cinnamon stick and cloves, then chill the compote in the refrigerator before serving.

Reminder

Never force the pressure cooker open. Wait for the steam to release through the valve on its own, or the hot compote may splatter.

Düdüklüde 15 dakika pişirin diyor ama benim kayısılarım daha sertti, 15 dakikanın sonunda hâlâ diriydi; bir 5 dakika daha kısık ateşte tutmam gerekti, yoksa kompostonun kıvamı istediğim gibi olmayacaktı.
