On a floured surface, roll the pizza dough into a thin round.
Spread the tomato sauce over the dough and distribute the mozzarella evenly on top.
Bake in a preheated oven until the edges are browned and the cheese has melted.
Top the hot pizza with fresh arugula, Parmesan shavings and olive oil. Serve immediately. Do not return it to the oven, or the arugula will wilt from the heat.
Important: Add the arugula only after the pizza comes out of the oven. Otherwise, the heat will wilt it and give it a bitter flavor. Allergens: contains dairy (mozzarella and Parmesan) and gluten.
