A simple dessert from Saudi and Gulf cuisine, asida is made by cooking flour with water into a thick porridge and drizzling it with honey or date syrup. With simple ingredients, it can be served as a dessert or main meal.
Cook the flour in butter over low heat for 3–4 minutes, until lightly colored.
Slowly add the water and salt. Cook over low heat, stirring constantly, for 12–15 minutes, until thick and smooth with no lumps.
Transfer to a serving dish and make a well in the center. Drizzle with honey or date syrup and serve hot.
Best eaten hot; it firms up as it cools. Reheat with a little added water.
