A classic for cold Australian winter evenings, this stew pressure-cooks cleaned lamb kidneys with root vegetables and brings them together in a thick sauce. The pressure cooker considerably shortens the traditionally long cooking time, helping the kidneys become tender without toughening.
Split the lamb kidneys and remove the white membrane and inner fat. Cut into pieces and coat in flour. Sear in the pressure cooker over high heat, leaving space between the pieces, until browned on every side.
Sauté the carrot, celeriac, onion and garlic in the same pan, then add the tomato paste and apple cider vinegar.
Add the meat stock, bay leaf, salt and black pepper, then close the lid. Cook at high pressure for 25 minutes and let the pressure drop naturally.
Remove the bay leaves and set the kidneys aside. Cook the sauce uncovered over low heat for 15 more minutes to thicken, then return the kidneys and serve.
