Beef marrow bones split lengthwise are briefly roasted with salt and thyme to make a simple but rich grill-house appetizer. With no carbohydrates, they are also a satisfying option for a ketogenic diet.

How to make it?

Prepare the bones

Soak the lengthwise-split beef marrow bones in cold water for 15 minutes to remove traces of blood.

Season

Drain the bones and pat dry with a dry cloth. Sprinkle with salt, black pepper and fresh thyme.

Roast

15 min

Arrange the bones cut-side up in a baking pan. Roast in an oven preheated to 220°C / 430°F for 15 minutes, until the marrow bubbles and turns lightly golden.

Serve

2 min

Serve the hot marrow sprinkled with parsley and accompanied by lemon slices.

Reminder

Dry the bones thoroughly before roasting, or the marrow will steam and become watery rather than bubbling. If you want to freeze the bones, do so while they are raw, before seasoning.
