A classic in Australian picnic baskets and school lunchboxes, zucchini slice is made by mixing grated zucchini with eggs and Kashar cheese, then cooking it in an air fryer. Almond flour makes it lower in carbohydrates and suitable for people with diabetes.

How to make it?

Prepare the Zucchini

Squeeze the moisture from the grated zucchini thoroughly using cheesecloth.

Make the Mixture

Beat the eggs, then mix them with the zucchini, Kashar cheese, onion, almond flour, olive oil, salt, and black pepper.

Air-Fry the Slice

25 min

Pour the mixture into a greased air fryer pan and cook at 180°C / 355°F for 25 minutes. If you do not have an air fryer, bake the same mixture in a 190°C / 375°F oven for 35 minutes.

Slice and Serve

5 min

Remove the slice from the pan and let it cool for 5 minutes, then cut into slices and serve.

Reminder

Squeeze the zucchini very well, or excess moisture will make the mixture watery and the cooked slice difficult to cut. Contains egg, dairy (Kashar cheese), and tree nuts (almond flour).
