These party appetizers turn salmon skin, often discarded, into a crisp snack by removing its fat and slowly baking it. The method reflects an Austrian tradition of making use of fish trimmings, and care is needed to crisp the skin without burning it.

How to make it?

Prepare the skins

Carefully scrape the salmon skin with a knife to remove any remaining layer of fat.

Season

Rub the cleaned skins with olive oil, salt, black pepper and thyme.

Bake

25 min

Lay the skins flat on a baking pan and bake in an oven preheated to 180°C / 355°F for 25 minutes, until completely crisp.

Serve

5 min

Break the crisps into pieces and serve on a plate.

Reminder

Hold the knife at a shallow angle while scraping the skin; a steep angle may pierce it. Watch the oven closely during the final 5 minutes, as the skins can go from crisp to burnt very quickly. Allergen: contains fish (salmon).

25 dakikalık pişirme benim fırınımda derileri tam çıtırlaştırmadı, kenarları hâlâ hafif esnekti; süreyi 5 dakika daha uzatsam ortası yanar mı diye çekiniyorum. Fırının alt katına almak fark yaratır mı acaba?
