A popular Indonesian street-food dish, ayam penyet is made by marinating spiced chicken, frying it, lightly smashing it, and serving it with spicy sambal. Its name refers to the chicken being smashed with a pestle (penyet).
Rub the chicken with garlic, turmeric, and ground coriander. Marinate for at least 30 minutes.
Simmer the marinated chicken in a small amount of water over medium heat for 15 minutes.
Fry the cooked chicken in oil over medium-high heat for 8–10 minutes, until crisp.
Steam the chili peppers, tomato, and garlic, then mash them and season with salt.
Lightly smash the fried chicken and serve hot with the sambal.
Sambal can be stored in a sealed container in the refrigerator for 3 days. The chicken is best eaten fresh.
