Heat the mixture in a small saucepan over low heat, stirring constantly, until it thickens slightly. Remove it from the heat before it boils.
Once the mixture has cooled to room temperature, stir in the mint and transfer it to a shallow container.
Place the container in the freezer. For the first 3–4 hours, stir with a fork once every hour. Then cover and freeze for at least 1 more hour.
Remove from the freezer a few minutes before serving. Scoop into balls and serve in chilled glasses.
Use thick ayran; a watery yogurt drink may make the ice cream icy and grainy. Allergens: contains milk and dairy products. If you are not using an ice cream maker, whisk the mixture once every hour as it freezes to keep it smooth.
