Azuki mochi is a Japanese dessert served cold, made by quickly softening red beans in a pressure cooker, mashing them with sugar into anko, and wrapping the paste in sticky mochiko dough. A pressure cooker significantly shortens the bean-cooking time compared with the traditional method, which takes hours.

How to make it?

Prepare the Beans

Rinse the red beans and put them in a pressure cooker. Cover them with water.

Cook in the Pressure Cooker

10 min

Secure the pressure cooker lid. Once it comes to pressure, reduce the heat and cook for 10 minutes.

Make the Anko

5 min

Wait for the pressure to release and open the lid. Mash the beans with the sugar into a smooth paste.

Make the Mochi Dough

Mix the mochiko, water, and a pinch of sugar. Cook in a saucepan for 6 minutes, until a sticky dough forms.

Shape

On a surface dusted with starch, divide the dough into small pieces. Fill each with anko and shape into a round ball.

Chill and Serve

5 min

Chill the mochi balls in the refrigerator for 5 minutes before serving.

Reminder

Do not expect the bean paste to be completely smooth; leaving it slightly chunky preserves the traditional texture. Use plenty of starch on your hands when shaping the dough, or it will stick.

Fasulyeyi düdüklüde 10 dakika yerine yalnızca 8 dakika pişirdim çünkü eski model tencerem hızlı ısınıyor, yine de yeterince yumuşamıştı ve ezmek son derece kolay olmuştu.

Anko biraz fazla tatlı geldi bana, şeker miktarını kısmak isterdim ama genel doku ve kıvam gerçekten çok başarılıydı. Düdüklü tencere fasulyeyi gerçekten inanılmaz derecede yumuşatmış.

Hamuru şekillendirirken bana çok yapışkan geldi, ellerimde sürekli dağılıyordu; nişasta miktarı yetersiz kaldı sanırım. Sonuç yine de yenilebilirdi ama görüntüsü pek düzgün olmadı, biraz dağınık kaldı.
