These American-style bread rings are boiled and then baked. The two-step method gives them a lightly glossy, crisp crust and a dense, chewy center. Slice them for sandwiches or serve with cheese or butter.
Dissolve the fresh yeast and honey in the lukewarm water. Add the flour and salt, then knead for about 10 minutes until the dough is firm and elastic.
Cover the dough and let it rise for 40 minutes, until doubled in size. Divide it into 8 pieces and shape each one into a ring with a hole in the center.
Add the baking soda and honey to boiling water. Boil the rings one at a time for 30–40 seconds, then lift them out with a slotted spoon and place them on a baking sheet.
Sprinkle sesame seeds over the boiled rings and bake in a preheated oven until deep golden brown.
Important: Honey and baking soda in the boiling water give the bagels their characteristic glossy crust; do not skip this step. Allergens: contains wheat (gluten) and sesame.
