A street breakfast from Baghdad: cooked fava beans, plenty of butter, and eggs come together in one pan, with pieces of flatbread served on top. The name means “buttery fava beans,” and the butter here is about texture, not flavor—the starchy beans combine with the melted butter to make a thick mixture that can be scooped up with a spoon. It is eaten early in the morning with fresh bread.

How to make it?

Start cooking the fava beans

Drain the soaked fava beans, rinse them well with cold water, and transfer them to a pot. Add enough water to cover them by about four finger-widths, along with the baking soda. The baking soda softens the skins; do not add salt yet, as it will toughen them.

Boil until tender

When the water boils, skim off the foam, reduce the heat, and cook until the beans crush when pressed with a finger. Add the salt during the last 10 minutes. Do not let all the liquid evaporate; leave about one 200 ml measure of thick cooking liquid in the pot.

Add the butter

Add the butter to the pot and let it melt. Use a wooden spoon to mash about one-third of the beans as you stir. The mashed beans release starch, which combines with the cooking liquid to thicken the mixture. Add the cumin and Turkish red pepper flakes at this stage.

Crack in the eggs

Crack the eggs over the beans, spacing them apart. Cover the pot and cook over low heat until the whites are set. The yolks should remain runny so they mix into the fava bean mixture when pierced with a spoon.

Serve

Cut the flatbread into squares and spread them on plates. Spoon the beans and eggs over the top. Serve salt, lemon wedges, and a pinch of cumin on the side; in Baghdad, everyone squeezes lemon over their own plate.

Reminder

Soak the dried fava beans overnight for at least 10 hours in cold water, changing the water once. Unsoaked beans will not soften, even after hours of boiling.

Kuru baklayı karbonatla haşlamak kabuğu yumuşatıyor ama fazlası sabunumsu tat bırakıyor, ölçüye uyun. Tereyağını baklanın suyu çekildikten sonra katmak gerekiyor, erken koyunca yağ suyun içinde kayboluyor ve tabakta tat yüzeye çıkmıyor.
