A hearty winter dish made by hollowing out a pumpkin, filling it with seasoned ground beef and rice, and baking it. The pumpkin’s natural sweetness balances the spiced filling. Serve warm for dinner.
Wash the pumpkin and cut off one end to make a lid. Remove the seeds and hollow out the center.
Thoroughly mix the ground beef, rice, grated onion, tomato paste, black pepper, and salt.
Fill the pumpkin with the mixture and put the lid back on.
Place the stuffed pumpkin in a baking dish and add water to the bottom of the dish. Bake at 190°C / 375°F, covered with foil, for 45 minutes; uncover for the last 10 minutes.
Before baking, prick the pumpkin skin in several places with a fork so steam can escape; otherwise, the skin may crack as it cooks. Keep it covered with foil during baking, then uncover it for the last 15 minutes to brown the top slightly.
