This savory cake is an easy solution for feeding a crowd at breakfast: leftover cooked vegetables are mixed with eggs and whole-wheat flour, then baked in a single pan. Cut into slices to serve; it tastes just as good hot or cold.

How to make it?

Drain the vegetables

Let the cooked zucchini, carrot, and broccoli drain in a colander for 10 minutes to remove excess liquid. If the vegetables are not drained, the cake may not bake through.

Prepare the mixture

Whisk the eggs with the milk. Add the whole-wheat flour, baking powder, salt, and black pepper, and mix until smooth. Fold in the drained vegetables and grated kashar cheese (Turkish semi-hard cheese).

Bake

Pour the mixture into a greased rectangular pan. Bake in an oven preheated to 180°C / 355°F for 25 minutes, until the top is golden and the center has risen.

Slice and serve

10 min

Let it rest for 10 minutes before removing it from the pan. Slice and serve hot or cold.

Reminder

Drain excess liquid from the vegetables before adding them to the mixture; otherwise, the center of the cake may turn rubbery. Allergens: contains wheat (gluten), egg, and milk.
