These sweet Turkish buns are filled with boiled, mashed pumpkin mixed with cinnamon and walnuts, making them a cozy breakfast treat for fall. Their soft dough and gently sweet filling pair well with tea.
Mix the mashed pumpkin with the sugar, cinnamon, and chopped walnuts.
Add the fresh yeast and sugar to the lukewarm milk and wait until foamy. Add the flour, melted butter, and salt, then knead into a soft dough.
Cover the dough and let it proof in a warm place until doubled in size.
Pinch off pieces of dough and roll them into rounds. Place some filling in the center of each, seal the dough around it, and shape into buns.
Brush the tops with egg yolk. Bake in an oven preheated to 180°C / 355°F until golden.
