A classic Azerbaijani pumpkin dessert, balqabaq shirini reaches a tender consistency in half an hour when cooked in a pressure cooker instead of spending hours in the oven. Pumpkin caramelized with sugar and cinnamon is served with chopped walnuts on top.

Prepare the Pumpkin

Peel the pumpkin, cut it into large cubes, and place it in the pressure cooker. Add the granulated sugar, cinnamon, and water.

Cook in the Pressure Cooker

20 min

Lock the lid and bring the pressure cooker to a boil over medium heat. Once it starts to whistle, reduce the heat and cook for 20 minutes.

Release the Steam

10 min

Remove from the heat and wait for the pressure to release naturally before opening. Do not force it open.

Serve

Transfer the pumpkin to a serving plate, sprinkle with chopped walnuts, and serve warm or cold.

Reminder

Never force the pressure cooker open. Wait for the pressure to release naturally; otherwise, hot steam can cause burns. Allergen: contains tree nuts (walnuts).
