Bammy is a traditional Jamaican bread with Taíno roots, made by squeezing grated cassava thoroughly, shaping it into thin rounds and frying it in a pan. Removing all the excess liquid helps the bread hold together. It is usually served with grilled fish, but can also be enjoyed without fish.
Place the grated cassava in a clean cloth and squeeze firmly by hand to remove all the liquid.
Mix the squeezed cassava with salt and shape into thin, round loaves.
Heat the sunflower oil in a pan and cook the loaves until golden and crisp on both sides.
Serve hot, alongside grilled fish if you like.
Squeeze the grated cassava thoroughly in a cloth. If too much liquid remains, the bread will fall apart in the pan.
