Banduma takes its name from how it is made: dry yufka is dipped in chicken broth, layered with shredded chicken, and browned in the oven. The yufka should be dipped quickly and removed, not left to soak; if it absorbs too much liquid, it will fall apart in the pan. This dish is served at weddings and holiday feasts in Kastamonu and Bolu.

Boil the chicken

Put the chicken pieces in a pot with cold water, a whole onion, and salt, then bring to a boil and skim off the foam. Cook over low heat for 45–50 minutes. The chicken is safely cooked when a thermometer inserted into the thickest part reads 74°C / 165°F and no pink remains near the bone. Strain and save the broth; it will be used throughout the dish.

Shred the chicken

Once the chicken has cooled, remove the skin and bones. Shred the meat by hand into finger-width strands. Do not chop it with a knife; cut meat will dry out in the casserole.

Dip the yufka

Warm the strained chicken broth and pour it into a wide bowl. Dip the yufka sheets one at a time, keeping each in the broth for no more than 3 seconds. The yufka should soften but not tear in your hands.

Layer in the baking dish

Lay one softened yufka sheet in a greased baking dish, brush it with melted butter, then spread some shredded chicken and black pepper over it. Repeat to make six layers, finishing with yufka on top. Brush the remaining butter over the top and drizzle a ladleful of chicken broth around the edges.

Brown in the oven

Bake in an oven preheated to 200°C / 390°F. Remove when the top layer is deep golden and the edges have pulled away from the pan. Let rest for 5 minutes, then cut into squares.

Reminder

Leave the boiled chicken to cool in its broth for 20 minutes; if you shred it while it is hot, the meat will fall into fine strands and disappear into the casserole.

Yufkaları tavuk suyunda banlarken bir saniyeden fazla tutmayın, ikinci yufkadan sonra elimde dağılmaya başladı. Tavuğu didiklerken kemik ve kıkırdak parçalarını tek tek ayıkladım, tepside fark edilmiyor ama ağızda hemen belli oluyor.

Bir saniye kuralı doğru. Yufkalar kuruysa süreyi uzatmak yerine yufkayı önce nemli bezin arasında bekletmek daha güvenli.
