Barglar is a classic Uzbek stuffed grape leaf dish made with a filling of ground meat and rice, then simmered in lemon water. The flavor settles as it cools, making it a popular choice for picnic baskets and lunchboxes.

How to make it?

Prepare the Grape Leaves

Boil the grape leaves for 2 minutes, then transfer them to cold water.

Make the Filling

Mix the ground meat, rice, chopped onion, grated tomato, mint, dill, salt, and black pepper to make the filling.

Roll

Place a 5 ml measure of filling on each leaf with the shiny side down. Roll tightly and pack the rolls snugly in a pot.

Cook

20 min

Pour the lemon juice, olive oil, and water over the rolls. Place a weight on top and simmer over low heat for 20 minutes. Cool before packing for a picnic.

Reminder

Do not roll the leaves too loosely; the rice expands as it cooks and may cause loose rolls to open. Cook the rolls with a weight on top, or they may fall apart on the surface.

Sarmaları piknik çantasında 3-4 saat taşımak lezzeti bozar mı, yoksa soğuduktan sonra sorun olmaz mı? Bende ikinci gün tadı daha da oturmuştu, sanırım limon suyu zamanla daha da belirginleşiyor.
