A staple at Kazakh tables, baursak is made by cutting yeasted dough into small pieces and frying them until puffed and golden. This version adds whole-wheat flour for a heartier texture while keeping the traditional crisp exterior.

Add the whole-wheat flour, all-purpose flour, and salt, then knead into a soft dough.
Let the dough rise in a warm place for 15 minutes.
Cut the dough into small pieces and fry them in hot cooking oil until golden on all sides. For an air fryer, brush the pieces with oil and cook at 200°C / 390°F for 8 minutes. If you do not have an air fryer, bake them in a preheated 200°C / 390°F oven for 12 minutes.
Let the dough rise in a warm, not hot, place; excessive heat can kill the yeast and keep the dough from rising. Watch the oil temperature when frying: oil that is too hot can brown the outside while leaving the inside undercooked. Contains wheat (gluten) and dairy.
