Baby food recipes
For families looking for a smooth meal without added salt as their babies begin solid foods, this purée combines lean beef from the round with carrots, potatoes and zucchini in a pressure cooker. Enriched with olive oil and containing no dairy products, it also suits babies who are sensitive to lactose. Shredding the beef and passing it through a fine sieve takes some time, but the result is a fiber-free, heart-friendly meal.
Put the diced beef from the round in a pressure cooker and add enough water to cover. Close the lid and, once the cooker whistles, continue cooking over low heat.
Carefully release the pressure and open the lid. Add the carrot, potato and zucchini, close the lid again and continue cooking until the vegetables are soft.
Drain the beef and vegetables, reserving some cooking liquid. Shred the beef and blend it with the vegetables. Add the olive oil and enough reserved liquid to make a purée with a smoothness suited to your baby’s age.
Pass the smooth purée through a fine sieve to remove small strands of fiber, then divide into individual portions ready to serve.
Do not add salt or spices to your baby’s food: their taste buds cannot yet cope with these additions. You can freeze the purée in ice-cube trays and use it within a month.
