Freekeh porridge is a whole-grain baby food from Iraqi cuisine. Roasted green wheat is simmered in plenty of water until the grains soften, then blended until smooth. The fiber in freekeh makes this a filling meal that digests more slowly than rice.
Rinse the freekeh with plenty of water and drain it, removing any hull fragments that float to the surface.
Add the freekeh, water, and grated carrot to a pot. Simmer over low heat, stirring continuously, for 25 minutes, until the grains are soft.
Blend the mixture with the olive oil until smooth, adjusting the texture to suit your baby’s age.
Let the porridge cool until lukewarm, then serve.
Blend the freekeh until completely smooth before feeding it to your baby; any grains that remain can pose a choking risk. Do not add salt or sugar before age 1.
