This practical Iraqi-style dish combines cumin-seasoned rice with leftover boiled beef tongue from the previous day, cut into small cubes. Using pre-cooked tongue makes it a quick meal.

Dice the tongue

Dice the leftover boiled beef tongue into small cubes.

Sauté the onion

Sauté the onion in olive oil for 5 minutes, until lightly golden.

Toast and cook the rice

Add the rice and toast with the cumin and black pepper for 2 minutes. Add the hot water and salt, then cook over low heat for 8 minutes, until the water is absorbed.

Let it rest

Remove from the heat and let it steam, covered, for 7 minutes without lifting the lid.

Mix in the tongue and serve

Mix the diced beef tongue and parsley into the pilaf and serve hot.

Reminder

Cut the tongue into medium-sized cubes; if the pieces are too small, they may get lost in the pilaf.

Suyunu çekmesi için tarifte yazan 8 dakika bende yetmedi, pirinç hâlâ diş gösteriyordu; süreyi 5 dakika daha uzatınca pilav biraz yapışkan bir kıvama geldi. Dilin üzerinde de ince bir yağ tabakası kalmıştı, bir dahaki sefere haşlama suyunu daha iyi süzeceğim.

Haklısınız, 8 dakika ocağınızın gücüne göre kısa kalabilir; pirinç tam diş vermeden suyunu çekerse birkaç dakika daha kısık ateşte bekletmeniz yeterli olur. Haşlama suyunu iyi süzmek de kıvamı gerçekten etkiler.
