This oven-baked dish from Belen in Hatay slowly tenderizes cubed beef with vegetables in its own juices. The secret is patience, not heat: let the beef release and reabsorb its juices before adding the tomatoes.

Sear the beef

Heat the olive oil in a wide pan. Arrange the beef cubes in a single layer with space between them. If you crowd the pan, the meat will steam instead of browning. Turn the cubes over high heat for 6–8 minutes, until browned on all sides. Do not add salt yet; it draws out moisture too early and causes the meat to steam before it browns.

Add the onion and garlic

Add the butter, sliced onion, and chopped garlic. Cook over medium heat, stirring, for 4–5 minutes until the onion turns translucent. Do not let it brown, or it will make the dish bitter.

Let the beef release and reabsorb its juices

15 min

Cover the pan, reduce the heat, and cook for 12–15 minutes. The beef will first release its juices, then the liquid will cook off. Add the tomatoes and tomato paste only after this stage: their acidity tightens the muscle fibers and delays collagen breakdown, so adding tomatoes early can slow tenderizing.

Add the vegetables and tomato paste

Coarsely chop the long green peppers and dice the tomatoes. Cook the tomato paste for 1 minute, then add the tomatoes, peppers, salt, black pepper, and thyme. Stir and transfer to a baking dish. Pour one 200 ml measure of hot water over the top. Cold water lowers the meat’s temperature and lengthens the cooking time.

Bake covered

75 min

Preheat the oven to 180°C / 355°F. Cover the baking dish tightly with its lid or foil and bake for 75 minutes. This time is for tenderness, not safety: the safety threshold for cubed beef is 63°C / 145°F and will be exceeded, while tenderness develops when collagen remains at 80–95°C / 176–203°F long enough to turn into gelatin. The dish is ready when a fork slides into the beef easily.

Bake uncovered and rest

20 min

Remove the foil and bake uncovered for another 15–20 minutes, until the liquid has cooked off and the surface is browned. After removing it from the oven, let it rest for 10 minutes before serving. Serve with pide or plain pilaf.

Reminder

Cubed beef becomes tender through time, not higher heat. Raising the oven to 200°C / 390°F to shorten the cooking time will not tenderize the meat; it will dry it out. Misafire yaptım, folyoyu geç açtım suyu tam çekmedi. Yine de çok beğenildi. Bir dahakine son 20 dakikayı kaçırmayacağım.

Kuzu kuşbaşıyla yaptım, 75 dakika yetti. Yanına sade pilav çok yakıştı. Fırını 200'e çıkarmak isteyenlere tavsiyem: çıkarmayın.
