This recipe turns leftover black radishes into a low-calorie, spicy side for winter meals by pickling them in vinegar brine with garlic and red pepper flakes. Over several days, the radish’s firm texture becomes crisp with the vinegar.

Pack the sliced radishes tightly into a sterilized jar with the garlic and red pepper flakes.
Bring the water, vinegar, and salt to a boil in a pot, then pour it into the jar while hot.
Seal the jar tightly and let it cool at room temperature for 20 minutes, then move it to a cool place for winter storage.
Warm the jar with lukewarm water before pouring in the hot brine, or the sudden temperature change may crack the glass. After opening the pickle jar, keep it refrigerated; leaving it at room temperature will speed up souring.
