Papinha is a Brazilian-style baby puree for infants 8 months and older. Dried beans are cooked with carrot and pumpkin until soft, then strained to a smooth consistency. Removing the bean skins one by one is the most labor-intensive step, but it helps keep the puree smooth.

How to make it?

Boil the beans

50 min

Drain the dried beans soaked overnight and put them in a pot with fresh water. Once the water boils, simmer for 50 minutes, until the beans are very tender.

Add the vegetables

20 min

Add the carrot and pumpkin to the cooked beans. Boil for 20 more minutes, until everything is soft enough to mash with a fork.

Remove the skins

15 min

Rub the cooked beans gently between your fingers, one at a time, to remove their skins. This takes patience but is necessary for a smooth puree.

Blend and strain the puree

10 min

Blend the skinned beans with the vegetables, adding a little of the cooking water at a time. Then pass the mixture through a fine strainer until smooth.

Reminder

If you boil the dried beans without soaking them overnight, they will take much longer to cook and their skins will be harder to remove. Do not serve the puree without passing it through a strainer; pieces of bean skin could pose a choking hazard for a baby.
